Combine chicken wings, peanut oil, Shaoxing wine, soy sauce, ground ginger, sugar, salt, garlic powder, and white pepper powder in a large bowl or ziplock bag. Mix thoroughly, ensuring wings are evenly coated. Marinate overnight in the refrigerator (recommended) or minimum 2 hours at room temperature.

Preheat the air fryer to 176°C (350°F). Drain the marinated chicken and discard liquid. Pat wings dry with paper towels.

Mix cornstarch and flour in a small bowl. Add to the chicken wings and toss until evenly coated, forming a dry coating with some flour visible on the surface.

Arrange wings in a single layer in the air fryer basket, skin side down. Spray with oil to eliminate any dry flour. Air fry for 12-15 minutes until golden and crispy, flipping once during cooking for even crisping.
