# Instructions:

01 - Cut the eggplant into 1-inch cubes and sprinkle with extra kosher salt. Let it sit for 15-30 minutes to draw out excess moisture. Pat dry thoroughly with paper towels.
02 - In a bowl, toss the eggplant cubes with avocado oil and all seasonings (dried rosemary, thyme, powdered garlic, smoked paprika, and 1/4 teaspoon kosher salt) until evenly coated.
03 - Preheat the air fryer to 400°F. Place the seasoned eggplant cubes in a single layer in the air fryer basket. Cook for 18 minutes, shaking or tossing halfway through to ensure even browning.
