Air Fryer Eggplant (Print)

Crispy eggplant rounds cooked in the air fryer with a savory-sweet soy garlic sauce for a quick and delicious side dish.

# Ingredients:

01 - 1 large eggplant
02 - 2 tablespoons avocado oil
03 - 2 tablespoons white sugar
04 - 2 tablespoons low sodium soy sauce
05 - 2 tablespoons minced garlic (about 3 cloves)
06 - 1 tablespoon chili oil (optional)

# Directions:

01 - Preheat air fryer to 175°C (350°F).
02 - Slice eggplant into 1.25 cm (half inch) thick rounds. Cut slits in the middle of each slice to create openings for the sauce.
03 - In a shallow bowl, combine avocado oil, sugar, soy sauce, minced garlic, and chili oil (if using).
04 - Line air fryer basket or tray with parchment paper for easy cleanup.
05 - Place eggplant rounds in a single layer in the air fryer basket or tray. Spoon the sauce mixture over each eggplant slice.
06 - Air fry for 15 minutes at 175°C (350°F). For a crispier exterior, broil for an additional 2 minutes.

# Notes:

01 - For oven method: Preheat to 190°C (375°F). Line a baking sheet with parchment paper and roast for 30 minutes until the eggplant is crispy on the outside and soft and tender inside.
