Air Fryer Fish Sticks (Print Version)

# Ingredients:

01 - Cooking spray.
02 - 1 pound cod, cut into 3-inch pieces.
03 - 1/2 cup cornstarch.
04 - 1/2 teaspoon salt, plus extra for seasoning.
05 - 1/2 teaspoon ground black pepper.
06 - 2 large eggs.
07 - 1 cup panko breadcrumbs.
08 - 1 teaspoon paprika.
09 - 1/2 cup mayo.
10 - 1 tablespoon fresh lemon juice.
11 - 1/4 cup finely chopped pickles.
12 - 2 tablespoons capers.
13 - 1/8 teaspoon salt.
14 - Chopped parsley or dill (optional).

# Instructions:

01 - Lightly coat the air fryer basket with cooking spray.
02 - Mix cornstarch, salt, and pepper in one dish. Beat eggs in another. Combine panko and paprika in a third dish.
03 - Dip cod pieces in cornstarch mix, then eggs, and finally panko. Ensure they're fully covered.
04 - Place breaded fish in air fryer. Spray lightly with oil. Cook at 375°F for 6 minutes, flip, then cook 4-6 minutes more until golden.
05 - Stir together mayo, lemon juice, pickles, capers, and salt in a bowl.
06 - Garnish fish with herbs if desired. Serve hot with tartar sauce and lemon wedges.

# Notes:

01 - Keep cooked fish sticks warm in a 250°F oven while making the second batch.
02 - Store leftovers in the fridge for a few days. Reheat in air fryer at 350°F for 3 minutes.
