Peel and grate the potatoes using a box grater's large holes.

Put grated potatoes in a bowl of cold water. Rinse a few times until water is clear. Drain well.

Spread potatoes on paper towels and pat dry thoroughly.

In a big bowl, mix potatoes with paprika, garlic powder, salt, and pepper.

Spray the air fryer basket with nonstick spray.

Spread potatoes in the basket, spray lightly with oil. Air fry at 350°F for 8 minutes.

Open basket, stir potatoes gently. Break up any clumps.

Air fry again for 6-8 minutes until very crispy.

Plate hash browns, sprinkle with chives or parsley. Great with eggs!.
