Line a baking sheet with wax paper. Beat egg in a shallow bowl. Mix Italian seasoning, salt, and breadcrumbs in another bowl.

Dip each mozzarella stick in egg, then breadcrumbs. Place on lined sheet. Freeze for 30-60 minutes.
