Set the air fryer to 400°F to preheat.

In a large bowl, combine canola oil, brown sugar, garlic powder, kosher salt, and black pepper.

Add the pork belly pieces to the bowl and toss until each piece is evenly coated in the oil mixture.

Place the coated pork belly pieces in a single layer in the air fryer basket. Cook in batches if necessary to avoid overcrowding.

Air fry the pork belly cubes for 18-20 minutes, shaking and flipping the pieces a couple of times during the cooking process. Adjust cooking time based on the size of the pork belly pieces and the air fryer.

Remove the pork belly bites from the air fryer and serve warm.
