Air Fryer Tostones (Print Version)

# Ingredients:

01 - 1 cup mayonnaise.
02 - 1/4 cup ketchup.
03 - 1/4 teaspoon garlic powder.
04 - 3 medium green plantains.
05 - 4 cups cold water.
06 - 1 tablespoon kosher salt.
07 - 3 tablespoons neutral cooking oil.
08 - Coarse salt for finishing.

# Instructions:

01 - Whisk together mayonnaise, ketchup and garlic powder. Refrigerate until needed.
02 - Score and peel plantains, cut into 1 1/2 inch chunks, soak in salted water for 20 minutes.
03 - Pat dry, toss with oil, air fry at 350°F for 3-6 minutes per side until tender.
04 - Flatten cooked pieces to 1/4 inch using tostonera or flat object.
05 - Brush with oil, air fry at 400°F for 3 minutes, flip, oil again, cook for 4 more minutes.
06 - Season with salt and serve hot with dipping sauce.

01 - Sauce can be made 48 hours ahead.
02 - Work in batches if needed.
03 - Best served immediately.
