Slice zucchini into thin rounds. Toss with a pinch of salt and let sit for 5 minutes.

Mix breadcrumbs, cheese, cornstarch, garlic powder, pepper, cayenne, and remaining salt in a bowl.

Pat zucchini dry with a towel. Toss with olive oil.

Toss zucchini in breadcrumb mixture, pressing to coat well.

Spray air fryer basket. Arrange zucchini in a single layer. Cook at 325°F for 10 minutes, flip, then cook 8-12 minutes more until crispy.
