Air Fryer Zucchini Chips (Print Version)

# Ingredients:

01 - 2 medium zucchini (about 1 pound).
02 - 1/2 teaspoon salt, plus extra for salting.
03 - 1/3 cup fine breadcrumbs.
04 - 3 tablespoons grated Parmesan cheese.
05 - 2 teaspoons cornstarch.
06 - 1 teaspoon garlic powder.
07 - 1/4 teaspoon black pepper.
08 - Pinch of cayenne (optional).
09 - 1 tablespoon olive oil.
10 - Cooking spray.

# Instructions:

01 - Slice zucchini into thin rounds. Toss with a pinch of salt and let sit for 5 minutes.
02 - Mix breadcrumbs, cheese, cornstarch, garlic powder, pepper, cayenne, and remaining salt in a bowl.
03 - Pat zucchini dry with a towel. Toss with olive oil.
04 - Toss zucchini in breadcrumb mixture, pressing to coat well.
05 - Spray air fryer basket. Arrange zucchini in a single layer. Cook at 325°F for 10 minutes, flip, then cook 8-12 minutes more until crispy.
06 - Sprinkle with extra cheese if desired. Serve hot or cool on a rack.

01 - Cook in batches if needed, depending on air fryer size.
