Preheat oven to 325°F (165°C).

In a bowl, mix the thawed and squeezed-dry spinach with 1/2 cup Cheddar cheese, about 5 tablespoons of dry bread crumbs, and the beaten egg. Spread the mixture into the bottom of a small baking dish.

Arrange the cod fillets on top of the spinach mixture. Season with salt and pepper.

Sprinkle the remaining Cheddar cheese and bread crumbs on top. Cover the dish and bake in the preheated oven for 20 minutes or until the fish flakes easily with a fork.
