Aunt Carol's Spinach Bake (Print Version)

01 - 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
02 - 1 cup sharp Cheddar cheese
03 - ⅓ cup dry bread crumbs
04 - 1 egg, beaten
05 - 1 pound cod fillets
06 - Salt and pepper to taste

# Instructions:

01 - Preheat oven to 325°F (165°C).
02 - In a bowl, mix the thawed and squeezed-dry spinach with 1/2 cup Cheddar cheese, about 5 tablespoons of dry bread crumbs, and the beaten egg. Spread the mixture into the bottom of a small baking dish.
03 - Arrange the cod fillets on top of the spinach mixture. Season with salt and pepper.
04 - Sprinkle the remaining Cheddar cheese and bread crumbs on top. Cover the dish and bake in the preheated oven for 20 minutes or until the fish flakes easily with a fork.
