Avocado Bacon Grilled Cheese (Print Version)

# Ingredients:

01 - 2 slices seeded whole grain bread or bread of choice
02 - 2 slices cheese (e.g., cheddar, cheddar jack, gruyere, etc.), 1 oz each
03 - 1/4 ripe Fresh California Avocado, seeded, peeled, and sliced
04 - 2 slices crispy cooked bacon, halved horizontally
05 - 1/2 tablespoon melted butter
06 - 1/2 tablespoon mayonnaise

# Instructions:

01 - Preheat an individual sandwich maker or skillet over medium-high heat.
02 - Place one cheese slice on one bread slice. Spread avocado slices over the cheese, leaving a small border of cheese around the edges.
03 - Top with the second slice of cheese, bacon slices, and the remaining bread slice.
04 - Combine the melted butter and mayonnaise. Spread half of the mixture onto the top slice of bread.
05 - Carefully place the sandwich into the sandwich maker with the butter-mayo side down. Spread the remaining mixture on the other side of the sandwich, close the sandwich maker, and cook for 2 to 5 minutes or until the sandwich is golden brown and the cheese is melted. Remove sandwich with a spatula or tongs, cut in half, and serve immediately.
06 - Place sandwich in preheated skillet, spread butter-mayo mixture on the second side, and cook for 3 minutes. Flip the sandwich and cook for an additional 2 minutes, pressing gently with a spatula or grill press. If the bread seems dry, add a little extra butter and cook for a few more seconds on both sides until golden brown and the cheese is melted.
