Bacon Mushroom Swiss Meatloaf (Print)

Savory meatloaf with Swiss cheese, bacon and mushrooms - a delicious twist on a classic comfort food dinner.

# Ingredients:

→ Meat Base

01 - 1/2 cup ketchup, plus 1 tablespoon for the meat mixture
02 - 1/2 pound ground pork
03 - 1 pound ground beef

→ Cheese & Proteins

04 - 4 slices bacon, cooked crisp and crumbled
05 - 1 cup grated Swiss cheese
06 - 1/2 cup grated Parmesan cheese

→ Vegetables

07 - 1 cup chopped mushrooms
08 - 1/2 cup chopped onions

→ Binding Ingredients

09 - 2 eggs
10 - 1/2 cup milk
11 - 1 tablespoon Worcestershire sauce
12 - 1 cup breadcrumbs

→ Seasonings

13 - 1 teaspoon dried thyme
14 - 1/2 teaspoon black pepper
15 - 1 teaspoon garlic powder
16 - 1/2 teaspoon salt

# Directions:

01 - Preheat oven to 375°F (190°C).
02 - Cook bacon in a pan until crispy. Remove, let cool, then crumble. In the same pan with bacon fat, sauté mushrooms and onions until soft and translucent. Set aside to cool.
03 - In a large bowl, combine ground beef, ground pork, Swiss cheese, breadcrumbs, milk, crumbled bacon, Parmesan cheese, cooled mushrooms, and onions. Add eggs, Worcestershire sauce, 1 tablespoon ketchup, garlic powder, salt, thyme, and pepper. Mix gently until just combined, being careful not to overmix.
04 - Shape the mixture into a loaf and place in a baking dish or on a parchment-lined baking sheet. Spread the remaining 1/2 cup of ketchup evenly over the top of the meatloaf.
05 - Bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
06 - Allow the meatloaf to rest for 10 minutes before slicing to ensure it holds together properly when served.

01 - Using the bacon fat to cook the vegetables adds extra flavor to the meatloaf.
02 - The combination of beef and pork creates a more tender and flavorful meatloaf than using just one type of meat.
