Baked Spinach Mushroom Wraps (Print)

Golden, cheesy spinach and mushroom-filled tortillas baked to perfection.

# Ingredients:

01 - 4 tortillas, 8 inches each
02 - 1 cup shredded mozzarella cheese
03 - 1 cup shredded cheddar cheese
04 - 3 cups roughly chopped fresh spinach
05 - 8 ounces sliced mushrooms
06 - Olive oil, optional for brushing

# Directions:

01 - Preheat your oven to 375°F (190°C).
02 - In a large skillet, sauté the mushrooms until they are golden brown and tender.
03 - Spread each tortilla with a layer of mozzarella and cheddar cheese. Top with the sautéed mushrooms and spinach.
04 - Fold the tortillas in half, creating a half-moon shape. Place them on a baking sheet.
05 - If desired, lightly brush the tops of the quesadillas with olive oil.
06 - Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the tortillas are golden brown.
07 - Serve immediately with your favorite salsa, sour cream, or guacamole.

# Notes:

01 - For a spicier kick, add a pinch of red pepper flakes to the mushroom mixture.
02 - If you prefer a crispier quesadilla, you can broil them for a few minutes after baking.
03 - You can also add other vegetables to the filling, such as bell peppers or onions.
