Baked Zucchini and Cheese (Print Version)

# Ingredients:

01 - 1 tablespoon chopped fresh parsley
02 - 1/2 teaspoon crushed red chili flakes (optional)
03 - 1 cup shredded mozzarella, divided

→ Vegetables & Seasoning

04 - 1 teaspoon cracked fresh black pepper
05 - 1/2 teaspoon salt
06 - 1 teaspoon Italian herbs blend
07 - 1 teaspoon garlic powder
08 - 2 tablespoons olive oil
09 - 1 cup grape tomatoes, halved
10 - 1 onion, chopped
11 - 1 green bell pepper, diced
12 - 2 large zucchinis, diced

# Instructions:

01 - Set your oven to 190°C to preheat before starting the preparation.
02 - Toss the diced zucchinis, green bell pepper, onion, and halved tomatoes with olive oil, garlic powder, Italian herbs, salt, and black pepper until evenly coated.
03 - Combine half of the shredded mozzarella with the seasoned vegetables, ensuring the cheese is evenly distributed.
04 - Transfer the vegetable mixture to a 23x33 cm baking dish and spread it out evenly to ensure proper cooking.
05 - Place the baking dish in the preheated oven and bake for 20 minutes until the zucchini begins to soften.
06 - Remove the dish from the oven and sprinkle the remaining mozzarella evenly over the vegetables.
07 - Return the dish to the oven and bake for an additional 10 minutes until the cheese is melted and golden.
08 - Remove the baking dish from the oven, top with fresh parsley and chili flakes (if desired), and serve hot.
