# Ingredients:

01 - 1 lb boneless, skinless chicken breast
02 - 1 cup cooked rice (white, brown, or cauliflower)
03 - 1 cup mixed vegetables (broccoli, bell peppers, carrots)
04 - 2 tablespoons olive oil
05 - Salt and pepper to taste

06 - 1/2 cup mayonnaise
07 - 2 tablespoons sriracha
08 - 1 tablespoon honey
09 - 1 teaspoon garlic powder
10 - 1 teaspoon lime juice

# Directions:

01 - Cook the rice according to the package instructions. Set it aside once done. Using a rice cooker simplifies the process and ensures consistent results.
02 - Cut the chicken breast into bite-sized pieces and season with salt and pepper. This enhances flavor and ensures even cooking.
03 - Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and sauté for 6-8 minutes until golden brown and cooked through. Ensure it reaches an internal temperature of 165°F.
04 - In a small bowl, mix mayonnaise, sriracha, honey, garlic powder, and lime juice. Taste and adjust for spice or sweetness to your preference.
05 - Add the mixed vegetables to the skillet with the cooked chicken. Cook for 2-3 minutes until just tender but still slightly crisp.
