# Ingredients:

01 - 1 lb boneless skinless chicken breast
02 - 1 cup cooked rice (white, brown, or cauliflower)
03 - 1 cup mixed vegetables (broccoli, bell peppers, carrots)
04 - 2 tablespoons olive oil
05 - Salt and pepper to taste

→ For the Sauce

06 - 1/2 cup mayonnaise
07 - 2 tablespoons sriracha
08 - 1 tablespoon honey
09 - 1 teaspoon garlic powder
10 - 1 teaspoon lime juice

# Directions:

01 - Cook the rice according to package instructions. Set aside once ready.
02 - Cut the chicken breast into bite-sized pieces and season with salt and pepper.
03 - Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and sauté until golden brown and cooked through, about 6-8 minutes. Ensure the internal temperature reaches 165°F.
04 - In a small bowl, mix together mayonnaise, sriracha, honey, garlic powder, and lime juice. Adjust seasoning to taste.
05 - Once the chicken is cooked, add mixed vegetables to the skillet. Cook for 2-3 minutes until slightly tender but still crisp.
06 - Remove the skillet from heat. Pour the sauce over the chicken and vegetables, stirring to coat evenly. Serve over rice and garnish with sriracha or chopped green onions as desired.
