Barbacoa Burrito (Print Version)

# Ingredients:

→ Rice

01 - 1 cup jasmine rice
02 - 1/4 cup chopped cilantro
03 - 1 lime

→ Burrito Base

04 - 16 ounces beef barbacoa
05 - 4 large flour tortillas (burrito sized)
06 - 1 cup black beans, drained and rinsed

→ Toppings

07 - 1/4 cup sour cream
08 - 1/4 cup guacamole
09 - 1/2 cup pico de gallo
10 - 1 cup shredded cheese
11 - 1 cup shredded romaine lettuce

# Instructions:

01 - Cook rice according to package directions. Mix in lime juice and chopped cilantro when done.
02 - Cook beef barbacoa in skillet over medium heat 3-5 minutes without stirring, then toss and cook 2-3 more minutes until heated through.
03 - Wrap tortillas in damp towel and microwave 30-60 seconds until soft, or heat in skillet 30 seconds per side.
04 - Layer each tortilla with rice, beans, barbacoa, sour cream, guacamole, pico de gallo, cheese, and lettuce.
05 - Fold tortilla ends over filling, then roll tightly. Place seam-side down, cut in half or wrap in foil to serve.
