Beef Burritos (Print Version)

# Ingredients:

→ Burrito Seasoning

01 - 1 teaspoon each onion powder, dried oregano, salt
02 - 2 teaspoons each cumin powder, paprika
03 - 1/4 teaspoon black pepper
04 - 1/4 teaspoon cayenne pepper (optional)

→ Beef Filling

05 - 1/2 tablespoon olive oil
06 - 2 garlic cloves
07 - 1/2 onion, finely chopped
08 - 500g/1 lb lean ground beef
09 - 2 tablespoons tomato paste
10 - 3 tablespoons water

→ Assembly

11 - 6-8 large flour tortillas (25cm/10"+)
12 - 3 cups cooked white long grain rice
13 - 3 cups shredded iceberg lettuce or cabbage
14 - 1 cup corn kernels
15 - 1 cup black beans
16 - 3 tomatoes, deseeded and diced
17 - 1/2 red onion, finely chopped
18 - Fresh cilantro, chopped (optional)
19 - 1 1/2 cups shredded melting cheese

# Instructions:

01 - Heat oil and cook garlic and onion until lightly browned. Add beef and cook until browned. Stir in seasonings, tomato paste and water. Cook until juicy but not dry. Cool 10 minutes.
02 - Optionally warm tortillas according to package directions if not planning to warm completed burritos.
03 - Layer rice, beef, lettuce, corn, beans, tomato, onion, cilantro and cheese just below center of each tortilla.
04 - Fold bottom up over filling, fold in sides, then roll up tightly. Wrap in foil.
05 - Pan fry in foil over medium-high heat for a few minutes per side or bake at 180C/350F for 20 minutes until warmed through and crispy.

# Notes:

01 - Excellent for freezing when using cabbage instead of lettuce
02 - Can add extra vegetables to beef filling
03 - Best served with sour cream and salsa
