Beef Lombardi Casserole (Print Version)

# Ingredients:

→ Meat and Pasta

01 - 1 pound lean ground beef (or turkey/chicken)
02 - 12 ounces egg noodles

→ Sauce Base

03 - 1 (14.5 oz) can diced tomatoes
04 - 1 (10 oz) can diced tomatoes and green chiles (Rotel)
05 - 1 (6 oz) can tomato paste
06 - 1 teaspoon garlic powder
07 - 1 teaspoon onion powder
08 - 1 teaspoon salt
09 - 1/2 teaspoon black pepper

→ Dairy

10 - 1 cup sour cream or Greek yogurt
11 - 2 cups shredded cheddar cheese
12 - 1 cup grated parmesan cheese
13 - 1 cup shredded mozzarella cheese

# Instructions:

01 - Preheat oven to 350°F. Grease a 9x13 baking dish.
02 - Brown ground beef in skillet, drain fat. Add tomatoes, paste, and seasonings. Simmer 15-20 minutes.
03 - Cook egg noodles until al dente. Drain and toss with sour cream.
04 - Spread noodles in baking dish, top with meat sauce and sprinkle with all cheeses.
05 - Bake 20-25 minutes until bubbly and cheese is lightly browned. Rest 5 minutes before serving.

01 - Add pasta water for extra creamy noodles
02 - Can simmer beef longer for deeper flavor
03 - Cover with foil if cheese browns too quickly
