Ground Beef and Rice Skillet (Print Version)

# Ingredients:

01 - 1 lb lean ground beef.
02 - 1 cup long-grain white rice.
03 - 1 medium onion, diced.
04 - 1 bell pepper, diced.
05 - 2 cloves garlic, minced.
06 - 2 cups beef broth.
07 - 14.5 oz can diced tomatoes.
08 - 1 tablespoon olive oil.
09 - 1 teaspoon paprika.
10 - 1 teaspoon dried oregano.
11 - Salt and pepper to taste.
12 - 1 cup shredded cheddar (optional).

# Instructions:

01 - Heat oil in skillet, cook beef with salt and pepper until no longer pink.
02 - Add onions, peppers, and garlic. Sauté 3-4 minutes until soft.
03 - Stir in paprika and oregano.
04 - Mix in rice to coat with beef mixture.
05 - Pour in broth and tomatoes, bring to boil then reduce heat.
06 - Cover and cook 18-20 minutes until rice is tender.
07 - Fluff rice, adjust seasoning, top with cheese if using.
