Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add diced onions and cook until translucent, about 3-4 minutes.

Add minced garlic and sliced mushrooms to the skillet. Cook until mushrooms are golden brown and moisture has evaporated, approximately 5-6 minutes.

Push vegetables to the side of the skillet and add beef chunks. Cook until browned on all sides, about 5-6 minutes.

Sprinkle flour over the beef and vegetables. Stir well to coat everything evenly. Slowly pour in beef broth, stirring constantly to prevent lumps.

Bring mixture to a simmer. Reduce heat to low and let simmer uncovered for 10-15 minutes, until gravy has thickened and beef is tender.

Stir in Worcestershire sauce and season with salt and pepper to taste. Remove from heat and garnish with chopped fresh parsley if desired.
