# Ingredients:

→ Main Ingredients

01 - 8 slices of bacon, halved
02 - 1 medium onion, chopped
03 - 1/2 medium green bell pepper, chopped
04 - 3 cans (28 oz each) pork and beans
05 - 3/4 cup barbecue sauce
06 - 1/2 cup brown sugar
07 - 1/4 cup distilled or cider vinegar
08 - 2 tsp dry mustard or 2 tbsp Dijon mustard

# Directions:

01 - Adjust oven rack to lower-middle position and heat oven to 325°F.
02 - Fry the bacon in a large, deep sauté pan until partially cooked and it has released about 1/4 cup of drippings. Remove the bacon and drain on paper towels.
03 - Add the onion and green bell pepper to the bacon drippings in the pan and sauté until tender, about 5 minutes.
04 - Add the beans and remaining ingredients to the pan; bring to a simmer. If the pan is not large enough, transfer the simmering beans to a large bowl and stir in the remaining ingredients.
05 - Pour the flavored beans into a greased 13-by-9-inch (or similar size) ovenproof pan. Top with bacon, and bake until the beans are bubbly and the sauce reaches the consistency of pancake syrup, about 2 hours.
06 - Let the baked beans stand to thicken slightly before serving.
