Best Pasta Fagioli Soup (Print Version)

01 - 2 lbs ground beef
02 - 1 onion, chopped
03 - 3 carrots, chopped
04 - 4 stalks celery, chopped
05 - 2 (28 oz) cans diced tomatoes, undrained
06 - 1 (16 oz) can red kidney beans, drained and rinsed
07 - 1 (16 oz) can white kidney beans, drained and rinsed
08 - 3 (10 oz) cans beef stock
09 - 3 tsp oregano
10 - 2 tsp pepper
11 - 5 tsp parsley
12 - 1 tsp Tabasco sauce (optional)
13 - 1 (20 oz) jar spaghetti sauce
14 - 8 oz pasta

# Instructions:

01 - Brown the ground beef in a skillet over medium heat. Once fully cooked, drain the fat and transfer the beef to the crockpot.
02 - Add the chopped onion, carrots, celery, diced tomatoes (with their juice), both types of kidney beans, beef stock, oregano, pepper, parsley, Tabasco sauce (if using), and the jar of spaghetti sauce to the crockpot. Stir well to combine.
03 - Set the crockpot to cook on low for 7-8 hours or on high for 4-5 hours. Allow the flavors to meld together during this slow cooking process.
04 - About 30 minutes before serving, add the pasta to the crockpot and cook until tender.
05 - Serve the Pasta Fagioli with warm crusty bread and enjoy.
