Blackened Salmon with Spinach Parmesan (Print)

# Ingredients:

01 - 4 salmon fillets, 6 oz each, skinless
02 - 2 cups fresh spinach
03 - 1/2 cup cream cheese, softened
04 - 1/3 cup grated Parmesan cheese
05 - 2 cloves garlic, minced
06 - 1 tablespoon olive oil

07 - 1 teaspoon paprika
08 - 1/2 teaspoon garlic powder
09 - 1/2 teaspoon onion powder
10 - 1/2 teaspoon black pepper
11 - Salt to taste

# Directions:

01 - Cook the spinach in a skillet over medium heat until wilted. Drain off excess liquid. In a bowl, combine the cooked spinach, cream cheese, Parmesan cheese, garlic, and season with salt and pepper. Mix well.
02 - Create a pocket in each salmon fillet by slicing horizontally, being careful not to cut all the way through. Stuff the pockets with the spinach and cheese mixture.
03 - In a small bowl, combine the paprika, garlic powder, onion powder, black pepper, and salt. Rub the seasoning mixture over the tops of the salmon fillets.
04 - Heat olive oil in a skillet over medium-high heat. Sear the salmon fillets for 2-3 minutes per side, or until the tops are blackened and crispy. Transfer the salmon to a preheated oven (350°F or 175°C) and bake for 10-12 minutes, or until cooked through.
05 - Serve the blackened salmon stuffed with spinach and Parmesan cheese with lemon wedges. Enjoy this delicious and healthy meal!
