Blue Truffles Recipe (Print Version)

# Ingredients:

01 - 2 cups white chocolate chips.
02 - 2 tablespoons heavy cream.
03 - 2 tablespoons blue curacao.
04 - 1/2 cup sanding sugar.
05 - Optional blue food coloring.

# Instructions:

01 - Place white chocolate chips and heavy cream in microwave-safe bowl.
02 - Heat mixture in microwave at 50% power using 30-second intervals, stirring between each.
03 - Continue heating and stirring until chocolate is completely melted and smooth.
04 - Add blue curacao to melted chocolate mixture and stir until fully incorporated.
05 - Cover bowl with plastic wrap and refrigerate exactly 2 hours until firm.
06 - Prepare baking sheet by lining with parchment paper.
07 - Pour sanding sugar into shallow bowl for coating truffles.
08 - Scoop heaping teaspoon of chilled mixture and roll between palms to form ball.
09 - Roll each formed ball in sanding sugar until completely coated.
10 - Place coated truffles on prepared baking sheet.
11 - Continue process until all mixture is used.
12 - Refrigerate completed truffles for additional hour to fully set.
13 - Store finished truffles in refrigerator in airtight container.
14 - Add drop of blue food coloring if deeper color desired.
15 - Serve chilled for best texture and appearance.
