Blueberry Fritter Bites (Print Version)

# Ingredients:

01 - 1-1/2 cups all-purpose flour.
02 - 1/2 cup granulated sugar.
03 - 2 teaspoons baking powder.
04 - 1/2 teaspoon salt.
05 - 6 tablespoons unsalted butter, melted.
06 - 1 large egg.
07 - 1 teaspoon vanilla.
08 - 2 containers (5.3 ounce each) blueberry greek yogurt.
09 - 1 cup fresh or frozen blueberries.
10 - 2 cups powdered sugar.
11 - 1/3 cup milk.
12 - 2 teaspoons blueberry jam.

# Instructions:

01 - Heat oven to 350°F. Spray 24-cup mini muffin pan with cooking spray.
02 - Whisk flour, sugar, baking powder and salt in large bowl.
03 - Whisk melted butter, egg, vanilla and yogurt in small bowl. Add to flour mixture and stir well. Fold in blueberries.
04 - Scoop batter into muffin cups, filling each almost full.
05 - Bake 15 minutes until light brown on top.
06 - Mix powdered sugar, milk and blueberry jam until smooth.
07 - Dip each fritter top in glaze, place on parchment-lined baking sheet.
08 - Broil 3-4 minutes, rotating pan, until tops crisp and brown. Brush with remaining glaze.

# Notes:

01 - Store in fridge and reheat before serving.
02 - Watch carefully during broiling to prevent burning.
03 - Let glaze set for 15 minutes before eating.
