Drop the mint leaves into your chilled glass. Gently muddle them with the simple syrup to release their oils.

Pour in the bourbon and chocolate liqueur or bitters.

Fill the glass with crushed ice, packing it in firmly.

Stir slowly with a bar spoon until the outside of the glass feels frosty. Add more crushed ice if it settles.

Garnish with a fresh mint sprig and, optionally, a small piece of dark chocolate. Serve immediately.
