Bruschetta Dip (Print Version)

# Ingredients:

01 - 4 Roma tomatoes.
02 - 1/4 cup fresh basil leaves, chopped.
03 - 2 cloves garlic, minced, divided.
04 - 2 tablespoons olive oil, divided.
05 - 1-2 teaspoons balsamic vinegar.
06 - 8 ounces feta cheese, crumbled.
07 - 4 ounces cream cheese.
08 - 1/2 cup sour cream.
09 - 1 tablespoon lemon juice.
10 - Salt to taste.
11 - Red pepper flakes for garnish.
12 - Grated Parmesan for garnish.
13 - Extra basil for garnish.

# Instructions:

01 - Core and dice tomatoes. Mix with basil, garlic, oil, vinegar and salt. Marinate 10 minutes.
02 - Process feta, cream cheese, sour cream, garlic, lemon juice, oil and salt until smooth.
03 - Spread cheese mixture in serving dish. Top with tomato mixture.
04 - Sprinkle with red pepper flakes, Parmesan and extra basil.

# Notes:

01 - Best served fresh.
02 - Serve with crackers or pita chips.
03 - Cheese base can be made ahead.
