Buckeye Bars Chocolate Layers (Print Version)

# Ingredients:

→ Peanut Butter Layer

01 - 1 cup creamy peanut butter
02 - 1 stick butter, softened
03 - 1 teaspoon vanilla extract
04 - 2 ½ cups powdered sugar, do not pack

→ Chocolate Layer

05 - 2 cups chocolate chips
06 - 2 tablespoons coconut oil (optional)

# Instructions:

01 - Line a square 9x9 baking dish with parchment paper.
02 - Add the peanut butter and softened butter to the bowl of a stand mixer and beat on medium speed with a paddle attachment until combined thoroughly, scraping down the sides as it blends.
03 - Add the vanilla extract and blend on low speed. Slowly add the powdered sugar and continue mixing until a dough forms. If the mixture is too wet, add more powdered sugar sparingly.
04 - Transfer the peanut butter mixture to the lined pan and press it down firmly into the corners using your fingers or the back of a wooden spoon.
05 - In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave for 30 seconds, stir, and heat for another 20-30 seconds until melted.
06 - Pour the melted chocolate mixture over the peanut butter layer and use a spatula to spread the chocolate evenly across the surface.
07 - Place the bars in the refrigerator for approximately 2 hours to allow the chocolate to harden completely.
08 - Top with sea salt, if desired, before serving.

# Notes:

01 - Store bars in an airtight container in the refrigerator for up to three days.
02 - The coconut oil provides a smoother and shinier chocolate consistency.
03 - Use a food scale or properly measure powdered sugar to avoid crumbly bars.
