Slice sausage into ½-inch rounds. Dice bell peppers and onion, mince garlic. Rinse rice until water runs clear.

Heat olive oil in large skillet over medium heat. Cook sausage 5-7 minutes until browned and crispy on edges. Remove and set aside.

In same skillet, sauté onion and bell peppers about 3 minutes until softened. Add garlic and cook 1 minute more until fragrant.

Add rinsed rice to skillet, combining with vegetables and oil. Toast about 2 minutes, stirring occasionally, until aromatic.

Add chicken broth and Cajun seasoning. Stir well, bring to boil, then reduce heat to low. Cover and simmer 15-20 minutes until rice is tender and liquid absorbed.

Return cooked sausage to skillet and stir everything together. Cook additional 3-5 minutes to meld flavors.

Garnish with optional fresh parsley, green onions, or hot sauce. Serve hot.
