Add flour to the sautéed vegetables to create a roux, then slowly stir in seafood stock and heavy cream.

Mix in seafood and Cajun seasoning, and simmer for 5 minutes until the filling thickens slightly.

Line a 9-inch pie dish with one pie crust, pour in the filling, and cover with the second pie crust. Cut vents into the top crust for steam to escape.
