Cajun Seafood Pot Pie (Print Version)

# Ingredients:

→ Filling

01 - 1 lb mixed seafood (shrimp, crab, crawfish)
02 - 1 cup diced onions
03 - 1/2 cup diced celery
04 - 1/2 cup diced bell peppers
05 - 2 cloves minced garlic
06 - 1/4 cup butter
07 - 1/4 cup all-purpose flour
08 - 1 cup seafood stock
09 - 1/2 cup heavy cream
10 - 2 tbsp Cajun seasoning

→ Crust

11 - 1 package pie crust (2 crusts)

# Instructions:

01 - Preheat oven to 375°F (190°C).
02 - Sauté onions, celery, bell peppers, and garlic in butter until softened.
03 - Add flour to the sautéed vegetables to create a roux, then slowly stir in seafood stock and heavy cream.
04 - Mix in seafood and Cajun seasoning, and simmer for 5 minutes until the filling thickens slightly.
05 - Line a 9-inch pie dish with one pie crust, pour in the filling, and cover with the second pie crust. Cut vents into the top crust for steam to escape.
06 - Bake in the preheated oven for 30-35 minutes or until the crust is golden brown.

01 - Allow the pie to rest for 10 minutes before serving to ensure the filling sets.
