Cajun Shrimp Sausage Dirty Rice (Print Version)

# Ingredients:

01 - 1 cup uncooked long-grain rice
02 - 8 oz smoked sausage, sliced (andouille or kielbasa)
03 - 8 oz peeled shrimp
04 - 1 medium onion, diced
05 - 1 green bell pepper, diced
06 - 2 celery stalks, diced
07 - 3 garlic cloves, minced

→ Seasoning and Cooking Liquid

08 - 2–3 Tbsp olive oil
09 - 1½ cups chicken broth (400 ml)
10 - 1 tsp smoked paprika
11 - ½ tsp dried thyme
12 - ½ tsp dried oregano
13 - ½ tsp garlic powder
14 - ¼ tsp cayenne pepper (optional)
15 - Salt and pepper, to taste
16 - Green onions, chopped (for garnish)

# Instructions:

01 - Heat olive oil in a large skillet or Dutch oven. Sauté diced onion, bell pepper, and celery for 5 minutes until softened.
02 - Incorporate minced garlic along with smoked paprika, dried thyme, dried oregano, garlic powder, and cayenne pepper (if using). Stir and cook for 1 minute to release aromas.
03 - Add sliced smoked sausage to the skillet and sauté for 3–4 minutes. Then add shrimp and cook until pink and opaque.
04 - Stir in uncooked long-grain rice, making sure it is well coated with the spices and oil.
05 - Pour in chicken broth, bring to a simmer, cover, and cook for 15–20 minutes or until the rice is tender and the liquid is absorbed.
06 - Adjust seasoning with salt and pepper. Serve hot, topped with chopped green onions.
