California Style Burrito (Print Version)

# Ingredients:

→ Base

01 - 8-10 burrito size tortillas
02 - 2-3 cups shredded cheese (cheddar/pepper jack mix or Mexican blend)
03 - 1 recipe carne asada
04 - 1 recipe Mexican street fries
05 - 1 recipe fire roasted salsa (or store bought)
06 - 1 pineapple, peeled and sliced (optional)

→ Avocado Crema

07 - 2 large avocados
08 - 1 cup sour cream
09 - 1/4 cup mayonnaise
10 - 2 tablespoons lime juice
11 - 1/2 teaspoon salt
12 - 1/2 teaspoon cumin
13 - 1/2 teaspoon garlic powder

# Instructions:

01 - Marinate carne asada. Make Mexican street fries. Blend avocado crema ingredients until smooth.
02 - Grill pineapple 6-8 minutes per side until charred. Grill carne asada according to recipe.
03 - Wrap tortillas in foil, warm in 350°F oven for 10 minutes until pliable.
04 - Layer carne asada, fries, cheese, avocado crema, salsa and pineapple in center of each tortilla. Roll burrito style.
05 - Cook assembled burritos in lightly oiled skillet over medium-high heat until golden on all sides.

# Notes:

01 - Can substitute avocado crema with sour cream and guacamole
02 - Freezes well for up to 3 months
03 - Can be reheated in oven or microwave
