Carrot Cake Cheesecake Bars (Print Version)

# Ingredients:

→ Carrot Cake Layer

01 - 1/2 cup vegetable oil
02 - 1/2 cup light brown sugar
03 - 1/2 cup granulated sugar
04 - 2 large eggs
05 - 1 teaspoon vanilla extract
06 - 1 1/2 cups all-purpose flour
07 - 1/2 teaspoon baking powder
08 - 1 teaspoon baking soda
09 - 1 1/2 teaspoons ground cinnamon
10 - 1/2 teaspoon ground nutmeg
11 - 1/4 teaspoon salt
12 - 1 cup finely grated carrots

→ Cheesecake Layer

13 - 8 ounces plain cream cheese, softened
14 - 1/2 cup granulated sugar
15 - 1 large egg
16 - 1 teaspoon vanilla extract

# Instructions:

01 - Preheat oven to 350°F. Line 9x9 baking dish with parchment paper.
02 - Whisk oil and sugars. Add eggs and vanilla. In separate bowl, mix dry ingredients. Combine wet and dry ingredients, then fold in grated carrots.
03 - Beat cream cheese, sugar, egg, and vanilla until smooth.
04 - Layer half carrot cake batter, then 3/4 cheesecake mixture, remaining carrot cake batter. Drizzle remaining cheesecake on top and swirl.
05 - Bake 30-35 minutes until toothpick comes out clean. Optional: cover with foil last 5-10 minutes to prevent browning.
