In a bowl, combine hoisin sauce, soy sauce, honey, rice wine, oyster sauce, five-spice powder, garlic, ginger, and food coloring (if using). Stir until well mixed.

Place chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for 2-3 hours.

Preheat your grill to medium-high heat or your oven to 375°F (190°C).

For grilling, cook the chicken for 20-25 minutes, turning occasionally and basting with extra marinade, until the internal temperature reaches 165°F (74°C). For roasting, place chicken on a baking sheet and roast for 25-30 minutes, basting occasionally, until the chicken is golden and cooked through.
