Cheese Shrimp Penne Spinach (Print Version)

# Ingredients:

01 - 12 oz (340g) penne pasta
02 - 1 lb (450g) large shrimp, peeled and deveined
03 - 2 tablespoons olive oil
04 - 3 cloves garlic, minced
05 - 3 cups fresh spinach, roughly chopped
06 - 1 cup heavy cream
07 - 1/2 cup chicken broth
08 - 1 cup grated Parmesan cheese
09 - 1 cup shredded mozzarella cheese
10 - 1/4 teaspoon red pepper flakes (optional)
11 - Salt and pepper to taste
12 - Fresh parsley, chopped (for garnish)

# Instructions:

01 - In a large pot, cook the penne pasta according to package instructions until al dente. Drain and set aside.
02 - While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
03 - In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes.
04 - Add the heavy cream and chicken broth to the skillet with the spinach and garlic. Stir to combine and bring to a simmer. Reduce the heat to low and slowly stir in the Parmesan and mozzarella cheeses until melted and the sauce is smooth. Season with salt, pepper, and red pepper flakes (if using).
05 - Add the cooked pasta and shrimp back to the skillet. Toss everything together until the pasta and shrimp are well coated in the cheese sauce.
06 - Garnish with fresh parsley and serve hot.
