Cheesy Chicken Broccoli Rice (Print)

Savory chicken, broccoli and rice smothered in cheese, made in one pot and ready in 30 minutes for the ultimate comfort meal.

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 1 small onion, chopped
03 - 2 chicken breasts, cut into small cubes
04 - ¼ teaspoon salt
05 - ¼ teaspoon black pepper
06 - 4 cloves garlic, minced

→ Rice and Liquid

07 - ¾ cup uncooked long grain rice
08 - 1 can (295 ml) cream of chicken soup
09 - 2 cups low sodium chicken broth

→ Finishing

10 - 2 cups broccoli florets
11 - 1 cup cheddar cheese, shredded
12 - 1 tablespoon fresh parsley, chopped

# Directions:

01 - Heat the olive oil in a large ovenproof skillet. Add chopped onion and cubed chicken. Cook on medium heat for about 5 minutes until the chicken starts to brown and is no longer pink. Season with salt and pepper. Stir in minced garlic and cook for another 30 seconds until fragrant.
02 - Add the rice, cream of chicken soup and chicken broth. Begin with 2 cups of broth, adding more as needed until rice is fully cooked.
03 - Bring to a boil, then reduce heat, cover, and cook over medium heat until the rice is fully cooked, stirring occasionally, approximately 15 minutes. Adjust seasoning as necessary.
04 - Incorporate the broccoli florets and half the cheese, continuing to cook for 2 minutes until broccoli slightly softens. Sprinkle the remaining cheese over the top and place the skillet under the broiler for 2-3 minutes, until the cheese melts and begins to brown.
05 - Sprinkle with fresh parsley before serving hot directly from the skillet.

# Notes:

01 - If using frozen broccoli, pat it dry first to prevent excess moisture.
02 - Long grain rice like Basmati works best for this dish; brown rice will require additional cooking time and liquid.
03 - For meal prep, complete through step 2, cover and refrigerate overnight, then finish cooking the next day.
04 - Store leftovers in an airtight container in the refrigerator for up to 3 days.
05 - Additional vegetables like mushrooms, bell peppers, or cauliflower can be incorporated.
