Cheesy Mississippi Mud Potatoes (Print)

Tender potatoes baked with melted cheddar, crispy bacon and green onions for the ultimate comforting side dish.

# Ingredients:

01 - 6-7 cups potatoes, peeled and diced
02 - 2 cups cheddar cheese, grated
03 - 1 lb bacon, cooked and crumbled
04 - 1 teaspoon garlic salt
05 - 1 cup mayonnaise
06 - 1/2 cup green onions, thinly sliced

# Directions:

01 - Preheat oven to 163°C (325°F). Peel and dice potatoes into bite-sized pieces. Cook bacon until crispy, then crumble into small pieces. Thinly slice green onions.
02 - In a large mixing bowl, combine diced potatoes, grated cheddar cheese, garlic salt, crumbled bacon, and sliced green onions. Add mayonnaise and stir until all ingredients are well coated.
03 - Transfer potato mixture to a 9x13-inch baking dish, spreading evenly. Bake until potatoes are tender and top is golden brown, about 1 hour and 30 minutes.
04 - Remove from oven and let cool slightly before serving as a side dish.
