Preheat oven to 190°C (375°F). Line a baking sheet with parchment paper or lightly grease it.

Cut a pocket into each chicken breast without cutting all the way through. In a bowl, combine mushrooms, cream cheese, mozzarella cheese, garlic, thyme, parsley, salt, and pepper to create the stuffing mixture.

Fill each chicken breast pocket with the prepared mushroom and cheese mixture.

In a skillet, melt the butter over medium heat. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown.

Transfer the seared chicken breasts to the prepared baking sheet. Sprinkle Parmesan cheese over each chicken breast. Bake for 20-25 minutes until the chicken is cooked through and cheese is melted.
