Shape ground beef into three equal sized patties that match the size of your bread slices, pressing gently to form.

Season both sides of each patty thoroughly with onion powder, garlic powder, salt and pepper.

Heat large heavy-bottomed skillet over medium-high heat until very hot, about 3-4 minutes.

Cook patties 4-5 minutes per side for medium, adjusting time for desired doneness. Remove to plate.

Combine all sauce ingredients in small bowl, mixing well to incorporate. Set aside.

Wipe out skillet and reduce heat to medium. Butter one side of each bread slice.

Place three bread slices in skillet butter-side down. Top each with two slices provolone. Add cooked patty on top of cheese layer, then top each with two slices cheddar.

Spread special sauce on unbuttered sides of remaining bread. Place on sandwiches sauce-side down.

Grill 3-4 minutes until golden brown. Carefully flip and grill other side 2-3 minutes until cheese melts.

Cut sandwiches diagonally and serve hot while cheese is melted.
