Cheesy Potato Burritos (Print)

01 - 1 pound ground beef (or ground turkey or plant-based alternative)
02 - 2 cups frozen tater tots
03 - 1 cup shredded cheddar cheese
04 - 1 cup shredded monterey jack cheese
05 - 1/2 cup sour cream
06 - 1/4 cup chipotle sauce, to taste
07 - 6 large flour tortilla wraps
08 - Salt and pepper to taste

# Directions:

01 - Preheat oven and bake tater tots according to package directions until golden and crispy.
02 - Brown ground beef in a skillet over medium heat. Season with salt and pepper. Drain excess grease once fully cooked.
03 - In a large bowl, combine cooked ground beef, slightly crushed crispy tater tots, shredded cheddar and monterey jack cheeses. Mix thoroughly to incorporate all ingredients.
04 - Warm flour tortillas in a dry skillet or microwave for 10-15 seconds until pliable.
05 - Spoon generous portions of filling onto the center of each tortilla. Drizzle with chipotle sauce and add a dollop of sour cream.
06 - Fold sides of tortilla over the filling, then fold bottom up and roll tightly to form a secure burrito.
07 - Place assembled burritos in a baking dish, sprinkle with additional shredded cheese, and bake until cheese melts and becomes bubbly.
08 - Remove burritos from oven and garnish with optional diced tomatoes, green onions, and cilantro if desired. Serve hot with extra sour cream and chipotle sauce.

01 - For a lighter version, substitute ground turkey or a plant-based alternative for the ground beef.
