Cheesy Quinoa Patties (Print)

Golden-crisp quinoa patties with mozzarella, herbs, and panko for the perfect protein-packed meal or versatile side dish.

# Ingredients:

01 - 1 cup cooked quinoa
02 - 2 large eggs
03 - ½ teaspoon dried oregano
04 - ½ teaspoon garlic powder
05 - ½ teaspoon salt
06 - ½ teaspoon black pepper
07 - ½ cup shredded mozzarella cheese
08 - ¼ cup finely minced red onion
09 - 1 cup panko breadcrumbs
10 - 4 tablespoons avocado oil

# Directions:

01 - In a medium bowl, combine the cooked quinoa, eggs, oregano, garlic powder, salt, and black pepper. Stir in the mozzarella cheese and minced red onion until well combined.
02 - Add the panko breadcrumbs to the mixture and stir. Let the mixture sit for a few minutes so the breadcrumbs can absorb some of the moisture.
03 - Using a ¼ cup measuring cup, scoop the quinoa mixture and wet your hands with water. Form the mixture into patties (you should get about 10 patties).
04 - Heat 2 tablespoons of avocado oil in a large non-stick skillet over medium heat. Once hot, add half of the quinoa patties and cook for 3-4 minutes per side, or until golden brown and crispy. Remove from the skillet and set aside.
05 - Add the remaining 2 tablespoons of avocado oil to the pan and cook the remaining patties in the same way. Serve warm.

# Notes:

01 - These patties can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or oven before serving.
