Chicken Bread Rolls (Print Version)

# Ingredients:

01 - 1 cup cooked chicken, diced.
02 - 1/2 cup onions, finely chopped.
03 - 1/4 cup bell peppers (yellow, orange or red), finely chopped.
04 - 1/4 tsp garlic powder.
05 - 1/4 cup mayonnaise.
06 - 1 Tbsp yellow mustard.
07 - Salt and black pepper to taste.
08 - 2 Tbsp olive oil.
09 - 4 slices bread.
10 - 1 egg, beaten.

# Instructions:

01 - Flatten bread slices with a rolling pin until very thin and easy to fold. Set aside.
02 - Mix chicken, onions, peppers, garlic powder, mayo, mustard, salt and pepper in a large bowl.
03 - Place some chicken filling on each flattened bread slice.
04 - Roll bread over filling tightly, using toothpicks to hold if needed.
05 - Heat olive oil in a large pan over medium-high heat.
06 - Dip each roll in beaten egg. Place rolls in pan, leaving space between each.
07 - Cook each side for 1-2 minutes until golden brown.
08 - Let cool a few minutes before serving.

# Notes:

01 - Make filling ahead and store in fridge.
02 - Use toothpicks to keep rolls closed while cooking.
03 - Can bake instead at 375°F for 15-20 minutes.
04 - Try Greek yogurt instead of mayo if preferred.
05 - Great for using leftover chicken.
