Chicken Chimichangas (Print Version)

# Ingredients:

→ Filling

01 - 2 cups cooked chicken, chopped or shredded
02 - 1 can refried beans
03 - 1/2 cup salsa
04 - 1 teaspoon cumin
05 - 1/2 teaspoon dried oregano, crushed
06 - 1 teaspoon chili powder
07 - 1 cup shredded cheese (cheddar or Mexican blend)
08 - 2 green onions, chopped

→ Assembly

09 - 3 tablespoons vegetable or canola oil
10 - 6 large flour tortillas

→ Toppings

11 - Salsa for serving
12 - Sour cream for serving
13 - Guacamole for serving

# Instructions:

01 - Cook chicken breasts in frying pan until no longer pink. Let rest before chopping.
02 - Combine refried beans, chicken, cheese, salsa, spices, and green onions in a bowl.
03 - Place 1/2 cup filling in center of each tortilla. Fold sides over and roll up burrito style.
04 - Brush with oil and bake at 400°F for 25 minutes until golden and crispy.
05 - Heat oil in skillet over medium heat. Cook chimichangas seam side down, turning every 2-3 seconds until golden all over.
