Chicken Hummus Naan Wraps (Print Version)

# Ingredients:

→ For the Wraps

01 - 4 pieces of naan bread
02 - 1 cup of roasted red pepper hummus
03 - 4 cups of organic spring mix
04 - 3 cups of shredded cooked chicken
05 - 4 tablespoons of full-fat feta cheese or goat cheese

→ For the Veggie Mixture

06 - 1/2 cup of peeled, sliced & quartered cucumber
07 - 1 cup of quartered cherry tomatoes
08 - 1/2 cup of peeled & diced red onion
09 - 1/4-1/3 cup of homemade red wine vinaigrette

→ For Garnish

10 - 1 1/2 teaspoons of extra vinaigrette per wrap
11 - Sea salt & black pepper to taste
12 - Extra virgin olive oil for drizzling

# Instructions:

01 - Toast naan bread under low broil for 3-5 minutes per side until slightly toasted.
02 - Combine chopped cucumber, tomatoes, and red onion in a bowl. Toss with red wine vinaigrette.
03 - Spread hummus on naan, layer with spring mix and shredded chicken. Top with veggie mixture and crumbled cheese.
04 - Garnish with extra vinaigrette, salt, pepper, and olive oil drizzle. Serve immediately or wrap with hemp cord.
