Easy Chicken Mushroom Soup (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil or butter.
02 - 1 medium onion, finely chopped.
03 - 2 cloves garlic, minced.
04 - 2 cups mushrooms, sliced.
05 - ¼ cup all-purpose flour.
06 - 6 cups chicken broth.
07 - ½ teaspoon dried thyme.
08 - ½ teaspoon dried rosemary.
09 - ½ cup heavy cream or half-and-half.
10 - 2 cups rotisserie chicken, shredded.
11 - 1 cup spinach or kale, chopped (optional).
12 - Salt and pepper to taste.
13 - Fresh parsley or chives for garnish.

# Instructions:

01 - Cook onion in oil until translucent, about 4 minutes. Add garlic for 30 seconds.
02 - Add mushrooms and cook 5-7 minutes until browned.
03 - Stir in flour and cook 2 minutes. Gradually add broth, stirring constantly.
04 - Add herbs and simmer 10 minutes.
05 - Add chicken, optional greens, and cream. Simmer 5 minutes and season to taste.
