One Pot Chicken Parmesan Pasta (Print)

A hearty one-pot meal combining tender chicken, pasta, and two cheeses in a savory marinara sauce with Italian herbs.

# Ingredients:

→ Pasta and Base

01 - 340g penne or rotini pasta
02 - 950ml chicken stock
03 - 240ml marinara sauce

→ Proteins and Dairy

04 - 450g chicken breasts, diced
05 - 100g shredded mozzarella cheese
06 - 100g grated Parmesan cheese

→ Aromatics and Seasonings

07 - 3 garlic cloves, minced
08 - 1 teaspoon dried Italian herbs
09 - Salt and pepper to taste
10 - 2 tablespoons olive oil
11 - Fresh basil leaves, chopped for garnish (optional)

# Directions:

01 - Heat olive oil in a large pot over medium heat. Add diced chicken, Italian herbs, minced garlic, salt and pepper. Cook for 5-7 minutes, stirring occasionally, until chicken is thoroughly cooked with no pink remaining.
02 - Pour marinara sauce and pasta into the pot, then add chicken stock. Bring to a gentle boil, then reduce heat to low.
03 - Cover the pot and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and most of the liquid has been absorbed.
04 - Remove pot from heat. Add all mozzarella and Parmesan cheese, stirring until completely melted and incorporated.
05 - Garnish with fresh chopped basil if desired. Serve immediately while hot and cheese is still melty.
