Chipotle Honey Salmon Tacos (Print)

# Ingredients:

→ Base

01 - 12 corn tortillas or flour tortillas, warmed

→ Pineapple Salsa

02 - 1 cup fresh pineapple chunks
03 - ½ teaspoon freshly grated ginger
04 - 2 tablespoons fresh cilantro, chopped
05 - 1 jalapeño, deseeded and finely diced
06 - Juice of 1 fresh lime

→ Salmon

07 - 450g (16 oz) salmon fillets, cut into chunks
08 - 2 tablespoons avocado oil
09 - 1 tablespoon chipotle adobo sauce or chipotle powder
10 - 2 tablespoons honey
11 - Salt and pepper to taste

→ Garnish

12 - 1 tablespoon fresh cilantro, chopped
13 - 1 cup finely shredded cabbage
14 - Crumbled queso fresco (optional)
15 - ¼ cup cilantro lime sauce (optional)
16 - 1 avocado, sliced (optional)

# Directions:

01 - If using frozen pineapple, thaw completely before dicing. Combine diced pineapple, chopped cilantro, minced ginger, deseeded and finely diced jalapeño, fresh lime juice, and a pinch of salt in a small bowl. Refrigerate until ready to assemble tacos.
02 - Cut salmon fillets into bite-sized chunks. In a medium bowl, combine the salmon with chipotle adobo sauce, honey, avocado oil, salt and pepper. Toss gently to coat evenly.
03 - Preheat a skillet over medium-high heat. Add avocado oil to coat the bottom well. Carefully add the seasoned salmon chunks and sear for approximately 4 minutes per side until caramelized on the outside and cooked through but still moist.
04 - Warm the tortillas. Layer each tortilla with shredded cabbage, chipotle honey salmon chunks, and pineapple salsa. Garnish with fresh cilantro, crumbled queso fresco, avocado slices, and drizzle with cilantro lime sauce if desired.
