Chocolate Mud Bars (Print Version)

# Ingredients:

→ Crust

01 - 30 Oreo cookies
02 - ½ cup (113g) unsalted butter, melted

→ Brownie Layer

03 - 1½ cups (187.5g) all-purpose flour
04 - ⅓ cup (42g) unsweetened cocoa powder
05 - ½ teaspoon baking powder
06 - ¼ teaspoon kosher salt
07 - 4 large eggs, room temperature
08 - 2 cups (400g) granulated sugar
09 - ¾ cup (170g) unsalted butter, room temperature
10 - 2 teaspoons vanilla

→ Chocolate Mousse Layer

11 - 2 cups (490g) whole milk
12 - 1 package (3.9 ounces) dry instant chocolate pudding mix
13 - ½ cup (62.5g) confectioners' sugar
14 - 16 ounces whipped topping, divided
15 - 1 jar (11.75 ounces) hot fudge topping

# Instructions:

01 - Preheat oven to 350°F. Spray 9x13-inch baking dish with non-stick spray.
02 - Process Oreos into fine crumbs, reserve ¼ cup for topping. Mix remaining crumbs with melted butter and press into pan.
03 - Mix dry ingredients. Beat eggs, sugar, butter, and vanilla until fluffy. Combine with dry ingredients and spread over crust. Bake 25-30 minutes until barely set.
04 - Beat milk, pudding mix, and sugar until soft-set. Fold in half of whipped topping. Spread over cooled brownies.
05 - Chill 1-1½ hours. Top with hot fudge, remaining whipped topping, and reserved cookie crumbs.
