Christmas Sugar Cookie Cheesecake (Print Version)

# Ingredients:

→ Sugar Cookie Crust

01 - 2 cups crushed sugar cookies (store-bought or homemade)
02 - 6 tablespoons unsalted butter, melted

→ Cheesecake Filling

03 - 3 (8 ounce) packages cream cheese, softened
04 - 1 cup granulated sugar
05 - 3 large eggs
06 - 1 teaspoon vanilla extract
07 - ½ cup sour cream
08 - ⅓ cup Christmas-colored sprinkles (red, green, and white)

→ Topping

09 - Whipped cream (optional)
10 - Extra Christmas sprinkles, for garnish

# Instructions:

01 - Preheat oven to 325°F (160°C). Grease a 9-inch springform pan. Mix crushed sugar cookies with melted butter, press firmly into pan bottom, and bake 8-10 minutes until lightly golden. Cool completely.
02 - Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract and sour cream. Gently fold in sprinkles without overmixing.
03 - Pour filling over cooled crust. Bake for 50-60 minutes until center is almost set but slightly jiggly. Turn off oven, leave door ajar, and let sit for 1 hour.
04 - Remove from oven and cool to room temperature. Refrigerate for at least 4 hours or overnight.
05 - Top with whipped cream and extra Christmas sprinkles before serving.

# Notes:

01 - For best results, chill the cheesecake overnight
02 - Center should still have a slight jiggle when done baking
